GLUTEN FREE, LOW CALORIE QUARANTINE COOKIE

Happy Sunday to you all? How was online church? Some of us did not baff to online church and we hear some people wore their Sunday's best and even collected offering in their sitting room ๐Ÿ˜‚๐Ÿ˜‚๐Ÿ˜‚, we will do better next sunday.
Meanwhile, research has shown that in the past one week, human beings have consumed more calories in food as they move from their fridge to pantry to pot and then to their bed or dance in front of tik tok app... anyway i thought of a simple low calorie thing you can nibble on before you break your weighing scale.

INGREDIENTS:
1. Chaff from juiced pineapple, apple and grapes (i made juice for the twins and thier dad, i couldn't get rid of the chaff)

2. 1 Cup of Oat flour (rolled oats or wheat flour will also work)
3. 2 to 3 tablespoons of oil
4. Sugar or sweetner to taste
5. One large egg
6. Mixed Fruit raisins
Combine everything in a bowl and line a baking sheet with patchment paper. Smear the batter on the paper to flatten it then bake till crisp.

For those that don't have oven, i used a grill pan for this, i lined the pan smear the batter on it with a spoon, flatten and put it under low heat. 

I covered the pan slightly to let out steam so it can dry quickly. I also flipped so the top can dry too till i achieved the crisp i was looking for..It tasted and felt like eating plantain or sweet potatoes chips..
