VEGETABLE SAUCE AND RICE

This was my dinner on the 15th.
Had a couple of meetings, left the last one before 6pm tried to rush home because Nanny closes by 6pm but #lagostraffic won't let us get home early.

Anyway, called Bobos from traffic to find out what he would like for dinner. After going through menu he may like, he settled for #vegetable #sauce and #rice .
I checked with Nanny if we still had vegetable in the freezer and answer was in the negative ( i usually buy them in bulk from mile 12, wash and store them in #ziplock bags then super freeze them for use).
So here i am stuck with my estate market πŸ™„πŸ™„πŸ˜‚. Here are the Ingredients for this simple recipe o
INGREDIENTS
#Pumpkin Leaves (Ugwu): 3bunch
Green Leaves (#spinach/teteh): 2bunch
#Tomatoes: 5 plum ones
Fresh #Pepper: to taste
Palm oil: 3 cooking spoon
Meat
Dry #fish
Titus Fish
#Salt & #Seasoning
#Onions: one large
PREPARATION
Boil Meat till tender. Clean vegetable to rid it off all dirt then slice. Clean Fish, sprinkle a little salt then fry. Wash dry fish with warm water and salt.
Coarsely blend Onions, Pepper and Tomatoes.
Heat oil in a pot, pour blended Onions, saute for a few minutes then add Pepper and tomatoes. Cook for a little over 7 minutes, stirring at intervals.
Add Meat, dryfish and season to taste. Add the vegetables, cover to reduce a bit then stir to incoporate Vegetables and pepper sauce well.
Correct seasoning and serve with rice with fried fish on the sideπŸ˜‰.
Well we had dinner and slept well.
