Happy Sunday Foodaholics.... for those of you who have been following my show and blog for like 5 years now, you already know that one of my favourite fish is Titus #Fish, truly love it.
When some clients order for #Croaker Fish or #LadyFish, i just wonder, they are not only bony and pricey, they are also not as yummy as my #titusfish
Individual preferences yeah... i honestly respect whatever anybody loves as food, i eat every kinda fish i have come across, but here in Nigeria, Titus wins it for me!! and it is quite affordable too.
So this Lunch is Titus Fish and Plantain.
INGREDIENTS
Titus Fish
Salt
Seasoning
Garlic
Thyme
Chili pepper powder
Oil
Plantain
Left over Stew

Preparation
Clean Fish and drain, pat with a kitchen towel to dry.

In a bowl, Season with salt, minced garlic, a pinch of thyme, chili and seasoning to taste.
Drizzle a tablespoon or 2 of oil on the fish and toss to incoporate all ingredients.
Line an oven tray with patchment paper and lay fish on it. Cover with aluminium foil
Set oven to grill ( i used an electric oven) 225 for 30 minutes, i removed the foil and allowed it dry out at 225 for 20 minutes. If using gas oven, grill for 30 minutes on medium heat and dry out on high for 10 minutes.
Serve with fried Plantain and stew.
