First on our menu this morning of January 1st 2018 is Ewa ( #Beans )
Now, by the time it is mixed with corn in yoruba land and you have twins, it turns to Ewa-Ibeji 😉, its actually called #Adalu in Yoruba while the #southafrica #Xhosa tribe will call it #umngqusho ( i actually spent like 30 minutes trying to pronounce that at the South African stand at a food fair recently, anyway it sounds like oomgushu)

Beans and Corn, easy to make, frying plantain is easy too but the technicality of this dish lies in frying the #Agoyinsauce to perfection without burning it... yes, it's important you don't cross the line from #caramelizedonions to burnt #onions.
When i first started making Agoyin Sauce, once or twice i have crossed the line to burnt, it may not taste horrible but it's nothing compared to when you get it right. PERFECT CARAMELIZED ONIONS.
INGREDIENTS
5 medium sized Onions
8 pieces of Fresh #Pepper (or to taste)
One and half cup of #Palmoil
#Seasoning
5 cups of #Beans (Oloyin)
3 cups of #Sweetcorn
Plantain ( You can fry as much #dodo as you can eat)

PREPARATION
Get chaff and stones off Beans, wash and cook in a pressure cooker till very soft. Add the #corn and mix to incoporate.
AGOYIN SAUCE
Heat Palm oil in a pot (I use a #castiron) till it's bleached, this process can be dangerous so i have a few safety tips.

Heat Palm oil in a pot (I use a #castiron) till it's bleached, this process can be dangerous so i have a few safety tips.
1. Use a deep pot so the flame is not too close to the oil.
2. (For those in the abroad) Turn off your smoke detector so alarm doesn't go off. You know your Oyinbo neighbours are very kind, they can help you call 911 ontop of common beans, then you will coman explain yourself.
3. Watch it, dont take your eyes of it, dont text "awon aye" at that time or take selfie to avoid story that touch ( you can continue your gist on how some people didn't like their body after you finish bleaching the oil)
4. When you are convinced it's bleached when oil has some kinda whitish foam (slide left to see picture) then TURN COOKER OFF before you put anything ( it is safer if the flame is off)
5. Add some salt first before adding the Onions then turn cooker back on
MAKING SAUCE : Blend onions with a food processor ( without adding water), fry in the bleached oil till it gets to translucent golden brown kinda floating look (watch it because it can easily get from #translucentgoldenbrown to black burnt) at that point add blended Fresh Pepper.
I must let you know here that i dont like "Long thing". For those who have been following me, they know already. So rather than grind pepper and boil before frying dry, i grind it with my food processor add to the caramelized onions, fry till its almost getting dark but not burnt ( you must keep stirring).
Season and serve with you Beans.
