PLANTAIN AND VEGETABLE FISH SAUCE...

Okay, i will say it again!! I didn't make a mistake marrying from #Ekiti State, I like Food, they have food, so we gel wella. Shout out to Bobos #BabaIbeji πŸ™ŒπŸ™Œ
INGREDIENTS
PLANTAIN (Brought from the village by Bobos)

FROZEN PUMPKIN LEAVES (All these People in my estate junction selling 5 leaves of Ugwu for N50, "na who una wan send go back village una dey find abi?"
So i buy N500 worth of pumpkin leaves from mile 12 market, clean them, pack them into Ziplock bags then freeze. They last me for a month.
MARINADE ( I make marinades for grills and bakes, i also save them for sauces to serve as seasoning)
FISH: The Sardines i got from Arena Market came handy
OIL
PEPPER
ONIONS
SIDE: Tangerine (from Ekiti too πŸ˜‚πŸ˜‚πŸ˜‚)
PREPARATION
Boil Plantain skin on (best way to boil Plantain, ask your Grandma) till skin turns grey and soft.
For Sauce: Blend Pepper and onions then pour into heated oil to fry. Add marinade to season then add the sardines.



Stir, taste for seasoning ( you can adjust seasoning at this point if required) then add Pumpkin Leaves.
Cook and Stir for about 3 minutes then serve with boiled Plantain.
