Anyway, i made this recipe ( I have been thinking up lots and lots for Foodies and Spice Season 8 #Iyaibeji starting in August and Powered by SUPREME NOODLES)
I wanted something Savoury and Sweet with some hint of Pepper that will feature corn ( Cos i was craving boiled corn). So my Chicken Cornco was born ( dont call it any other thing but this )
INGREDIENTS
Corn
Chicken Breast
Coconut
Pepper
Onions
Garlic
Salt/Seasoning
Oil
Semolina
Corn Flour
Egg
Corn
Chicken Breast

Semolina

It was Super yummy with amazing layers of Flavour and texture.

Boiled Corn ( with salt or sugar, your preference), remove flesh from coconut, dice chicken breast and thinly dice peppers to ur taste.
Season Chicken and cook in a pan of hot oil( 2 table spoons) cook both sides till crispy and golden brown then set aside.
Grate coconut and cook in pan with the Coconut water, sprinkle some sugar to enhance sweetness
When it is dry and brown, set aside
Add little oil to Pan
Saute Garlic, Peppers and Onions
Add boiled Corn, Season and Stir. Cook for just 1 minute
Add one cup of semolina to a bowl, half spoon of Sugar, 2 spoons full of corn flour and some little water, stir ( it has to be a bit runny. Whisk in an Egg

Pour into a warm non stick pan, swirl to coat all sides. Heat on low until its starts to puff up, flip the other side to cook
Transfer to a plate
Assemble your Chicken, Coconut, Corn and Peppers.
Wrap and have a colourful feast.
