So the Finished Product a la
WORLD PLANTAIN DAY... Traditionally in this clime, Plantain and Eggs seem to be the most convenient pair but i do like it so much with some Corned beef Sauce.

Slice Onion, Tomatoes, Spring Onion and Pepper

Heat oil in a pan and add the vegetables to sweat or Saute

Add some corned Beef and Season to taste

Serve with hot fried Plantain wey get Life
