SPECIAL SECRET FRIED RICE STOCK

Hello Foodaholics, am sure the week started on a good note. I wish you God's favour this week.

One thing i want you to take away from this Fried Rice Recipe today is my secret Stock i use for making my Jollof or Fried rice. I am giving you this secret for Free, just thank me later.
I do a lot of oven grilling , especially with chicken. So after using my secret marinades which usually includes Onions, Yaji and some of my secret grilling goodness, i pop it in the oven to allow it ooze that juice.
Now the Secret is in the Juice/stock, i scoop every single bit of goodness from my grilling dish, pack them into containers and freeze till when i want to use. When it's time to use, i scoop into a blender and blend till smooth.
This act allows all the ingredients, from the onions, spices and even bits and pieces of chicken skin in the stock incoporate well before pouring into the pot to boil. After it boils, Season as desired then you add your rice. TURMERIC, is key to have a colourful Fried Rice.

Grilled Chicken with the juicy Goodness. Note: Most of the Onions and spices are packed into the chicken's cavity (Na im be the chicken belle), so when packing, i scoop them out from there and refrigerate with the juice.

When its time to use, i blend to incorporate everything

Allow stock to boil, add one cooking spoon of oil before adding per boiled rice, season as desired with salt, seasoning, turmeric for colour, and i add a dash of Pepper. Allow to cook till rice is dried, be careful not to over cook rice. Moderate water.

So for the "add in's", i used sausage. Heat one cooking spoon of oil and fry sausage till pinkish

Add chopped Green Pepper

Add Diced Carrots

Add spring onions... allow to saute a bit

Add canned green peas. It is coming late cos its been precooked and soft

I dont add my sweet corn till am ready to serve cos it has the tendency to spoil your fried rice. Inshort, i don't add any vegs at all till serving time.
So i scoop rice into one tablespoon of heated oil in a pan add some vegs, stir fry and add the corn before serving.
