BEANS WITH VINEGAR AND CARAMELIZED ONION SAUCE

Hi Honey's,
My Super duper Foodaholics, yesterday i was at work then i felt this strong hunger for Beans. Beans! Beans!! Beans!!!... but i wanted it special so i was thinking of a twist. I got an idea, then decided to text Bobos ( cos dese days you dont just think of something and cook then eat it alone, you may have to check if Daddy is game, else you will have to plan for 2 dinners).

So, Daddy is game! Closed from work and assembled my ingredients for this Super Satisfying and Tasty Beans recipe.
Annnnnddddd if you are wondering how to pull Beans after work in Lagos, do get your self a Pressure cooker😉... it takes less than 30 minutes to essemble on 2 burners.
INGREDIENTS
4 CUPS OF BEANS
APPLE CIDER VINEGAR
FRESH PEPPER TO TASTE
ONE BIG BULB OF ONION (FOR SAUCE)
MEDIUM SIZED ONION (FOR BEANS)
COOKING OIL
SMOKED FISH
SALT AND SEASONING
PLANTAIN
Procedure:
Onion, Scotch Bonnet (fresh Pepper), Smoked Fish

Pulse Onions and Pepper seperately in a food processor

Wash Fish

Heat 2 to 3 cooking spoons of oil, add some salt

Add the Onions and allow it cook

Stir as it browns, dont let it burn

Stir till it begins to kinda float but not burnt

Add the Peppers

Add the fish, season as desired, little seasoning is advised cos the Caramelized Onions got lotta sodium already

Fry some plantains

Yeahhhh.... you should have boiled beans by now with one bulb of onions. And when its cooked and soft, add 4 table spoons full of Vinegar (I used Apple Cider) and some salt to taste. 
Vinegar just brought out some richness in the taste of the Beans.

Serve with Sauce and Dodo and have a super satisfying meal.
