VALENTINE CHICKEN WITH ZOBO GLAZE

Sooo, the Valentine is almost here, in the spirit of RED things we decided to celebrate Roselle/Zobo this Season.

Another thing we can do with Zobo is SYRUP. This Syrup can be used for drinks, as topping and today am showing u how to use it as GLAZE also for meat.
Trust me, this is in the class of fine dinning. My photography didnt do much justice to the look of the finished work... it was awesome. Perfect for a Romantic Dinner!
INGREDIENTS
Chicken Breast
Onions
Red Pepper
Seasoning
Garlic
White Pepper
Zobo (2 cups from soaked flowers)
Butter (1 table spoon)
2 spoons Lemon juice

Chicken Breast

Season chicken with Salt, Pepper, and choice Seasoning.
Drizzle a table spoon of oil. Line your baking sheet or pan with foil, Add 2 cloves of Garlic and half a medium chopped onions

Cover with foil and cook in a pre heated oven for 20 mins

Wash Zobo and soak for 30 mins. Drain (you can use the flowers for d Jam, to see jam recipe visitwww.foodiesandspice.blogspot.com, the liquid can be sweetened for drink or added to lemonade also)

Chop red pepper

Pour liquid into pan, quarter cup of sugar and boil till reduced (At this point you have your Zobo Syrup)

To make the glaze, Add 2 spoons of lemon juice, Pepper, one table spoon butter stir and simmer till completely reduced

Use as a sauce or glaze for your meat. This time it was chicken breast and it was heavenly. PERFECT ROMANTIC DINNER.

Shhhhhhhhhh! Add a spoon of Zobo syrup to a shot of Vodka and a glass of Sprite .Relax with Boo/Bae and have a Happy Valentine �
