Roselle Flower (Also known as Hibiscus)is a very common flower in Nigeria, hence buying Roselle/Zobo in the market is quite cheap.
This particular batch i used was bought for 100 Naira and i have been using it since May Last year for Zobo drinks and Zobo Lemonade. Last Saturday i decided to make Jam with the remaining batch.
Guys, it was awesome! After going through this, your children shouldn't go to school without a delicious home made sandwich in their lunch box.
You dont need to buy the expensive Jams. With less than 500 Naira, you can pamper your kids with this home made Zobo Jam with all its Tangy-sweetness and benefits.
Jams can be used for Bread, Cookies, baking and even making sauce for meat. As kids, we just loved to stick our fingers into jam jars and rub it on the toast bread, prefferably, lick the fingers. Lol
Anyway, lets go Jam-ing!!!
INGREDIENTS
Roselle/Zobo 2 Hands full
Sugar 1 and Half Cup (or to ur taste)
Lemon or lime Juice 1 Table Spoon
Water 2 and Half cups

Dried Roselle/Zobo Flowers
Wash them thoroughly to remove all dirts and insects. Dont be scared when its bleeding red, its got a whole lotta red to give. So focus on cleaning it.
Blend Zobo with water
Put a pot on fire, Pour Zobo puree into a pot and add sugar
Add lemon or lime Juice
Boil till liquid is totally reduced and thickening
Reduce heat, simmer till its completely thickend and looks like Jam ( it has to be sorta jelly-like)
Store while hot in clean Jar and refrigerate. Can store for more than 2 weeks if well refrigerated
