LETS CELEBRATE OVER 20 THOUSAND LIKES ON FB WITH FISH....


Waow! What more can i say but a very big THANK YOU to you Foodaholics, i may never have come this far without your love and support. Without you all talking about Foodies and Spice, without you sharing the gist and inviting Family and friends to follow me or watch the program, I may never be able to boast of 20k followers. It means so much to me.
To whom much is given, much is expected abi? Now that i have you all on my TEAM, what do i do with it? Well, a lot, we will keep cooking, Choping and Bellefull-ing.
Am about to hit the Studios for Season 8 in a few weeks. So Brace up, it can only get better in here. To celebrate our 20k likes, here is this Fish Recipe i made for a client this week.
SPRING ORANGE FISH & ORANGE SAUCE
INGREDIENTS
Fish (I recomend Titus or Salmon)
Oranges
Seasoning
Oil
Pepper
Spring Onions
Onion
Butter
Tumeric
Salt
Garlic
Lime juice
Corn Starch

If you are using Scaled fish, make sure u remove scales. My Favourite Fish is Salmon or Titus, but client wanted Croaker Fish so i had to remove the scale

Spring onions and Yellow Pepper to taste. Note use the whitish part of the spring onions so you can retain the yellowish colour

Juice from one orange

Blend all together, with 3 table spoon oil, garlic, seasoning, tumeric and salt to taste.

Cut through fish not completely though, dis is to allow the marinade enter into the fish well

Arrange on a baking sheet and cook in a preheated oven for 30 minutes

Juice 4 to 5 oranges. Chop yellow pepper to taste

Put the juice in a cooking pan and simmer gently, add tumeric, seasoning and salt to taste

Add the chopped Pepper

One table spoon of Lime juice

Simmer till a bit reduced

Mix a spoon of cornstarch to sauce to thicken

Add a spoon of butter

Turn off heat and you will have a sweet and Spicy orange Sauce
