SAVE THE PLANTAIN!!!


Now, this is not the time food should be wasting. Nigeria is not positioned for any form of wastage right now because the cost of food stuffs has gone really high (Story for another day).
In the light of this anger, there lay some plantains that just got over-ripe in my kitchen. Plantains have this bad habit of getting all ripe at once instead of going bit by bit. And when they all decide to turn yellow, how many person one fry, boil, bake or grill at once?
So today i thought up something... the victims were just 2 left over plantains that i thought had been eaten since, realizing it was on its way to trash, i changed its destiny to this beautiful yummy cake i named PLANTCAKE!
Call it plantain pancake if you like or Mosa cake but inspiration came from Mosa, if i can make Mosa puffs and deep fry, why cant i make them into pancakes with less oil? I Served this cake with Sardines... you wont believe your taste buds. This recipe was soooooo on point with the Sardines that i am putting a TM (Trademark) on this.

INGREDIENTS
2 over-ripe Plantains
2 fresh Pepper
Half bulb of onion
One egg
Salt
Seasoning
Oil
Flour


So, tap pictures for recipe and procedures.

Peel and slice over-ripe plantain

 Clean peppers and half bulb of onion

Blend them till smooth

Blend an egg into the mix


Pour into a bowl

Add a cup of flour
 
Season with salt and seasoning cubes. Mix well
 
Coat heated pan with little oil... say one table spoon
 
On low heat, gently place a spoon of the plantain barter, spreading it as u spoon
 
As soon as the sides turn Golden, flip it and allow other side to cook
 
Serve with Sardines... you wont believe your taste buds. This recipe was soooooo on point with the Sardines. I am putting a TM (Trademark) on this.
