MEATY PARTY PLATTER


Hello Foodaholicsss. How are we all doing? I see that our over-ripe plantain recipe reached over 12k people since Saturday. Thanks so much for the shares. I always tell you that i do not take all your support for granted and na una encouragement dey encourage me.
Meanwhile, i got an order for a meaty party platter last saturday as some group of friends thought to hangout at a resort (Christmas never finish for their body...lol).

So, we settled for peppered chicken wings, peppered gizzard and Shrimps. Today's story is going to be centred on the shrimps. First stop was the river market early saturday morning.
INGREDIENTS
Shrimps
Orange juice
Lemon juice
Soy Sauce
Spices/Herbs and Seasoning
Oil
Eggs
Flour

After haggling for more than 10minutes we finally agreed on kilos and rate


Ehn! Not after paying all that money then you are asking if you should clean it?... Madam you sure have to clean it biko!

Went sight seeing and i saw Crabs... i dont need them today

And some freshly caught fishes... is someone thinking banga soup?

Got back home with my cleaned Shrimps , cleaned them again and allow to dry

In the bowl of shrimps add thinly chopped onions and 3 table spoons of lemon juice

One table spoon soy sauce

I used turkish spice consisting of Paprika, Salt, Black Pepper, Garlic, Cumin, Oregano, Red Pepper and Cilantro. You can just use your curry jejeje if u cant find turkish spice in ur Neighbourhood or if you cant assemble any of the above.

Here is an orange... once i ate shrimps with orange sauce, i got hooked. Since then i just kukuma marinade it in orange

A spoon of tomato paste, one bay leaf and the Orange juice

Add little salt and season as desired but be careful cause shrimps got a load of sodium so it can easily get salty... less is more in this case.

Mix well with clean hands and allow it rest in the fridge over night. (So i go sleep o)

Sunday Morning: Shrimps outta d fridge, add little salt to 2 cups of flour, and you will need to whisk two eggs

Roll shrimps in the flour dredge

Transfer to egg and coat it

Heat oil in a pan

And fry shrimps in batches (... that condition wey dey always make crayfish bend)

Shrimps ready, decided to make a sauce for it.

Spring Onions Sauce
INGREDIENTS
Spring onions
Fresh Pepper
Ketchup
Cornstarch
Oil

Blend Spring Onions and Pepper adding the Shrimps marinade


Pour into heated oil then add half cup of ketchup. Melt 2 table spoons of corn starch and bring all to a boil.

All ready, this platter is all things PARTY. don't worry will share the peppered chicken and Gizzard recipe later.
