Hello my People...Wow! We hit 19k likes during the holiday, i am very grateful to have you all here. Thank you.
However, I had a blast in my kitchen this holiday, it was too busy, fast and spontaneous that i hardly had time to take pictures.
There were quite a number of guests who mainly used the opportunity of the holiday to visit the Twins and as a GREAT host, I had a super menu lined up which included Samosa, Ginger Jollof Rice, White Rice and Stew, Fried Rice ( for all Rice recipes visit and subscribe to www.youtube.com/ginaehikodi ) Chicken Coconut Curry Sauce, Grilled Goat meat, Asun and Fried Yam, Lemonade, Cookies and Grilled Chicken.
I am sure i may have forgotten something because it was just spontaneous as the guests were coming in, i had to just get something out. It was supper fun. For me, thats what the holiday is all about.
Cookie barter dropped on baking sheet for the oven

Cookie barter sprinkled with sugar sprinkles for decoration .. finished cookie came out very tasty cos the recipe had lemon, lime and you wont belive it!... a dash of Orijin. ( will share the recipe with you when i bake it again and take proper pictures)

Its a pity i couldn't take pictures along side but i was able to capture the grilled chicken a bit so let me share the recipe with you. For the cookies i started picture half way but couldn't finish it because my Men needed my attention in between. You can see one relaxing on Mummy's back (that is their favourite place these days).

INGREDIENTS FOR GRILLED CHICKEN

Half bulb of medium sized onion
Ginger
Tumeric
Garlic
Cumin
Chilli pepper
Coriander
Whole Chicken
Chicken seasoning
Canola oil
Salt



Blend Onions, ginger and one tea spoon each of the herbs and spices to make the marinade. Mix with the chicken Seasoning, salt and 3 table spoons of oil

Rub it on the chicken, the cavity and under the skin on the chicken breast

Well rubbed chicken

Allow to rest in the fridge for 30mins to an hour, it can stay longer or overnight if u wish. Put it in your baking dish, cover with foil and allow to cook in the oven for no less than 50mins or until well cooked. Remove foil and allow to brown for approximately 10mins

Bring it out, let it rest and allow the juice settle in. Guys, this little chicken here was super tasty dat Juice was wow, made a super Gravy.
