STEAMING HOT EDIKANIKONG FOR THE WEEKEND...



Foodaholics, This is a Beautiful Edikanikong Recipe for the weekend. Enjoy!

INGREDIENTS
Beef
Smoked Fish
Kpomo

Stockfish
Shaki and Roundabout (Cow Intestine)
TGWU Leaves (Shredded Fluted Pumpkin Leaves)
Onion 1 Small Bulb
Palm Oil
Bologi (Water Leave)
Shrimps
Crayfish
Cameroon Pepper (not more than 5-6 seeds)
Seasoning Cubes
Snail
Periwinkle
Salt



PREPARATION

Season and boil beef, shaki and roundabout as desired till soft (allow water dry but don’t burn it) add your washed stockfish. Blend dry ingredients (pepper and crayfish)

Add 3 cooking spoon of oil to the meat stock, then washed dry fish.  Wash and dice kpomo and add to pot, add shrimps and stir, add washed snails.
Immediately add your Ugwu (pumpkin leaves) and after a minute add the water leaves (bologi) and pour your dry ingredients (pepper and crayfish on it) add periwinkles on it (this is to make sure you still find your periwinkle to press).





Season with salt and seasoning as desired, stir and allow to cook for 3minutes.  Stir again and soup is ready… Of Course step down swallow lol.
