ORANGE SAUCE WITH FISH AND PRAWNS ON A BED OF SWEET PEPPERS

Oranges are fruits we have almost all year round in Nigeria, we all know how to suck the juice off the orange, some of us devour the pulp which is quite healthy but not everyone of us can make a super sauce from Oranges.

Sometimes we have excess Oranges in our homes and trash them when they rot but after I share this recipe, trust me you will begin to see those Oranges displayed by the vendors on your street in another light.

It’s my simple Orange Sauce with Fish and Prawns on a bed of Sweet Peppers.
  
Ingredients
·        Oranges
·        Lemon
·        Black Pepper
·        Seasoning
·        Red Bell or Sweet Pepper
·        Sweet Yellow Pepper
·        Carrots
·        Onions
·        Green Pepper
·        Fresh Fish
·        Fresh Prawns
·        Corn Starch
·        Oil (your favourite oil but not Palm Oil, I use Canola or sunflower for this recipe)


Preparation
First, juice the oranges (press the juice out into a bowl), then juice One lemon into the Orange Juice. Place on low heat and stir, allow to boil, then season with salt and seasoning cubes to taste.
Stir in a spoon of corn starch or as much to thicken it till you get a slurry consistency. Voila! Your Orange Sauce is ready and you can enjoy it with Fish and Prawns. (this should take approximately 5-7 mins)

To prepare Fish and Prawns, first marinade with Garlic, Black Pepper, Curry, Rosemary leaves, Salt and seasoning cubes (you can use your favourite fish spices), Allow to rest in the Fridge for 15 to 30 minutes. (While its resting you can slice the peppers, Carrot and onions, remember to remove the pepper seeds before slicing)

In a non-stick pan add some oil, enough to coat the pan and place your fish, cook both sides till the skin is flaky and the middle juicy, not dried or burnt but well cooked. Do the same to your prawns, they are ready when the turn Pink and juicy but not dried or burnt.

Prepare Peppers and Carrot by adding some oil in a pan, allow to heat then add the onions, sauté for a few minutes, add the peppers and Carrots sauté then season as desired.

To Serve: Add some Orange Juice on a plate enough to coat the bottom of the plate, add the Peppers and Carrots then Place a fish on it, add some peppers on the fish then place the Prawns on it then drizzle some orange sauce on the Prawns.
