BAKED SAUSAGE OMELETTE



Hello Foodaholics, Happy New year to you again, I am sure we are all enjoying the New Year? I am positive it shall be a very productive and blessed year.
                      
So, am sharing a simple recipe today based on some mails I received (I honestly thought this recipe
has been on the blog all this while) Anyway, Here is our very easy Baked Sausage Omelette.

INGREDIENTS
Tomatoes – 4 medium Size
Scotched Bonnet Pepper – to taste
Green Pepper – 1 medium Size
Spring Onions
Sausages
Eggs – 6
Onions – half bulb
Oil – Approx 1 cooking spoon
Flour – 3 spoons

PREPARATION

Start by chopping onions thinly and slice sausages.

Heat approximately one cooking spoon of oil in a frying pan, add a pinch of salt and sauté onions slightly. Add the sausages, chopped Scotched Bonnet peppers and spring onions. Allow to cook until sausage is golden brown then set aside.

Break and whisk eggs in a large bowl, add one cup of milk and flour. Season as desired and whisk thoroughly.

Layer a slightly greased baking pan with the sausages, Green Pepper and Tomatoes. Then pour the egg mixture over the peppers and sausage. Garnish with spring Onions and pop into a pre heated oven for 10-15 minutes.

Serve with bread and share with loved ones. This makes a very beautiful Saturday Morning Breakfast.
