Just before its Christmas Foodaholics, 3 Christmas recipes for you
Just before its Christmas Foodaholics, I will like to share 3 recipes that will get your family and friends all feeling your kitchen swag. First is my Pepperoni Jollof Rice (Abeg what is Christmas without Jollof rice?), then I have this Crispy Fried Chicken, trust me this is one trick to save your pot of Rice till Christmas evening, with the Flour coated on that chicken serving just one piece is super filling. Then we will serve a simple desert that will get your guests going “waooowww”.

Pepperoni Sausage

Butter
·
Tomatoes
·
Tomatoes Paste
·
Pepper (Scotch Bonnet)
·
Onions
·
Garlic
·
Green Pepper
·
Seasoning
·
Oil
Per boil rice, sieve and set
aside. In a pot add 2-3 table spoons of butter, allow it melt and heat before
adding Garlic and sauté chopped Onions (one bulb).
Add the Pepperoni (sliced),
fry for a minute or two then add the Tomatoes paste. Cook till the sour taste
from the paste has been eliminated then pour your Chicken stock enough to cook
the rice (Chicken stock can be made by boiling your Chicken with onions,
Garlic, salt and all your favorite spices and seasonings).
After pouring stock into the
pot, taste and adjust seasoning to the desired taste you want for your rice
(please be careful with salt, less is best). Cover pot and allow rice to cook.
In a separate pan, add 1 to 2
cooking spoon of oil, add a pinch of salt,
chopped Onions, allow to sauté, then follow with chopped green pepper, tomatoes
and pour in blended Onion and Pepper (scotch Bonnet pepper). Allow it cook for
3-5mins then season with seasoning cubes, Curry, rosemary leaves (use your
favorite Jollof spices sha…). Stir and taste the goodness of your Tomatoes
sauce.
As soon as Rice starts getting
dry pour in the sauce and incorporate into rice. Allow the rice dry up (some of
us can’t do without that burnt bottom pot of Jollof Rice… trust me it’s the
yummiest part meant only for the cook of the Jollof …lol), Then serve with some
Chicken.
Crispy Chicken
Ingredient

Flour
·
Salt
·
Seasoning
·
Eggs
·
Milk
·
Oil
Put some flour in a flat bowl,
season with salt, seasoning cubes and your favorite spices. In another flat
bowl, break 3 eggs, whisk and add some milk. Whisk some more then set aside.
Take a piece of Chicken and
roll in the Flour mix, then take it to the egg mix and roll in it also.
Transfer it back to the Flour and role again by this time the chicken is well
coated with flour set it on a flat tray. Do this with all the Chicken pieces.
By the time you are coating
the Chicken with flour and egg, Heat up a good amount of oil in a deep pot, add
the chicken and make sure it is covered in the oil (this is called deep
frying). Fry chicken until it is Golden brown.
WHAT NEXT?..... After we have
served Rice and eaten Christmas Chicken. As we settle to watch movies, gist,
gossip and catch up on all the 2015 activities. We can do some simple desert.
(I like to bake cakes and cookies) but just per adventure there is no time for
you to plan cakes and cookies here is something that is quite easy both in the
sense of making it and getting ingredients…
Bread Pudding
Ingredients

Bread

Eggs
·
Milk
·
Sugar
·
Raisins (or you can use cashew nuts)
·
Vanilla Essence
·
Butter
Pre heat oven, Slice bread
into tiny cubes and put it in a bowl, whisk 3 Eggs and sugar together, add a
cup or two of evaporated milk. Add your favorite flavor and cinnamon (you can
use your favorite flavoring).
Pour the mixture into the
Bread, add the Raisin or nuts then mix and incorporate bread properly in the
mixture.
Grease a baking pan with
butter and pour the Bread mix into the pan. Level it, whisk an egg and pour on
the bread (this is to give the top a beautiful glossy finish).
Bake in the oven for 20-25
mins or until set. Then serve with a
chilled fruit juice (there are always drinks for Christmas so choose your
favorite Brand)
Christmas is once in a year,
enjoy it cos am gonna enjoy mine being my first Christmas as a Mrs. Somebody….
