KARIMA’S ENKA STREET FOOD

Off we went in search of the lady whose kitchen is on a Bicycle and at last she has arrived. This was another amazing sight in front of me, Not because I haven’t seen food and snacks sold on a Bicycle before, No! But because this Bicycle has got a fridge, can heat kettles and I wondered where it was powered from.

Karima had resigned from working in the insurance sector to follow her food passion. She has been doing this Street food business close to a year on her Bicycle, I asked her why she chose to sell food on a Bicycle and she replied “I like to be original and promote ecological development”. Apparently, Karima is an “earth lover” and believes in living green hence she chose the bicycle which does not emit fumes and to power her fridge she choose an alternative and cheaper Source of power which is Solar.

Wow, I was really amazed to find out that this Bicycle kitchen is powered by solar, how innovative. She told me that the Bicycle was fabricated in France, however she designed it and it was made to her specification.

Karima also has a Facebook page for her Business which she uses to promote her recipes. Her customers are mainly passers-by and those visiting the hospital. Karima arrives at her spot by 12noon everyday and leaves by 2pm. And when I asked why she leaves so early, she said she has to prepare for the next day, she has to shop and prepare the recipes at home then sell them the next day. The Solar powered fridge helps keep them fresh.

She has quite a number of Customers. While I was there, I witnessed an 80 years old woman, Taxi driver and Hospital visitors buy her wares and they all seemed satisfied. On Karima’s Menu, she has Tea and Coffee, Apple sandwiches, Salads, Soft drinks etc. And for the first time I realized I can lace my sandwiches with fruits.

Karima truly inspired me with her Bicycle and the fact that you can creatively build your passion with the little resources you have. Here is my Karima inspired Sandwich.

INGREDIENT


·         ALMONDS
·         GRAPE  VINEGER
·         GRAPE(seedless)
·         APPLE
·         LETTUCE
·         SPRING ONION
·         SHRIMPS
·         VEGETABLE OIL
·         BLACK PEPPER
·         SALT
·         SEASONING CUBES
·         LEMON
·         CHEDDAR CHEESE
·         CUCUMBER
·         GARLIC


PREPERATION

Toast the almond in a hot pan, remove and allow to cool
Add 2 cloves of Garlic (minced), pinch of salt, black pepper and seasoning to the cleaned shrimps. Squeeze the lemon juice into the shrimps and allow to marinade for 10minutes.
Heat two teaspoons of vegetable oil in a pan and add the shrimps to fry. Remove from the heat when it turns pink or deep orange

Peel the cucumbers and dice it, chop the almonds into tiny bits, peel the apple skin and dice or dice it with the skin on.
Wash the lettuce thoroughly and roughly chop (I prefer to tear the leaves with my hands). Add 2 teaspoons of grape vinegar and a tablespoon of lemon juice, Add the chopped Apples, Almonds and shrimps. Put in layers and garnish with seedless grapes.

Serve with Bread and Cheddar Cheese.
