#Frenchfusion CHICKEN KEBAB SANDWICH AND FRIES

It didn't come as a surprise that my first encounter was
Love in the country of Love. Franc and Severine both lovers who own a mobile
Street kitchen attached to their Car. they have been doing this business for
over 14years.
I asked why they aren’t married having been doing business
together for so long and supposedly in love, then I got educated by both Roland
and Frank that in France, it is not “Necessary” to get married, you can live
together as lovers and be best friends forever without societal pressures
getting you to sign dotted or straight lines.
Anyway, I was amazed by their Kitchen because it was my
first time to actually see one being used for Business and not for event
activation. Their customers are usually passer-by and those visiting the
Hospital. Every morning they drive their Kiosk to their space and they attend
to a minimum of 15-25 Customers for the approximately 4 hours they will spend
there.
Franc says he really loves the business especially because
he can take the mobile Kiosk anywhere, he can take it to the stadium or
anywhere there is an event with lot of people. Now, I began to wonder on how he
gets to power the Kiosk since I didn’t see no inverters or Generators around
(thanks to my Nigerian Orientation). Franc then showed me a circuit point by
the wall which he says is available everywhere on streets and all they need do
is drive close to the circuit point, attach their cable and then power the
kiosk. They however pay bills to the ODF (which is the power company)
While Franc was doing all the talking, Severine was
preparing the menu for the Day and serving the customers. On their menu today
like everyday, they had Poulet et Frites which is Chicken and French fries.
(Yes just in case you don’t know, French Fries got its name from French fries…
lol). You would find a lot of Potatoes fries on French tables.
I started a conversation with one of their customers,
Arnorld who ordered fries and a Can of Coke like his friend Almondine, I asked
to know their street food culture, if they will rather eat out or cook a meal.
Arnold replied that Street Food for him is only a matter of necessity; he would
rather eat in a restaurant or eat home food.
I agreed with them because street food is always a life
saver on the streets when home is not close and those hunger pangs hit you. I
said thanks to Franc and Severine who really look like they love each other and
love their kitchen, I bade them goodbye and got inspired.

CHICKEN KEBAB SANDWICH AND FRIES
INGREDIENT
· POTATO FRIES
· CHICKEN BREAST
· SPRING ONION
· ONION
· BREAD
· GARLIC
· SEASONING CUBES
· ORORO (VEGETABLE OIL)
· BUTTER
· BLACK PEPPER
· SALT
· TOMATOES
PROCEDURES
First, cut the
chicken breasts into long strips and season with salt and black pepper.
Add 2 table spoons of butter in the frying pan on low heat. Put the
seasoned chicken breast into the pan and fry for few minutes until the both
sides are golden brown, then remove.
Add little amount
of oil into the pan (say 2 table spoon), pour the slized onion into the pan and
allow to caramelize, add garlic, one seasoning cube and Chopped spring onion
cook till they are caramelized and slightly browned then remove from the heat
Use a bread knife to cut through the
bread and heat the bread on the pan (face the cut surface down, you will like
the warm feeling of the bread with the flavor of the garlic oil and seasoning
from the pan) When the bread is heated and a bit crisp on the surface, add the
chicken, sliced tomatoes, caramelized onion and spring onion for garnish.
Heat a generous
amount of oil in a deep pan to fry the potatoes, remove them from the oil with
a slotted spoon once they turn golden and are crispy. Place in a paper towel to
drain oil. Serve Sandwich with the Fries and Ketchup.
