Sausage rolls and pine-coconut drink


Ingredients

2 cups of flour
Half teaspoon of salt
Sausages
Seasonings
Vegetable oil
3 table spoons of butter
Quarter cup of very cold water
Onions
Egg




Preparation


Put the flour, butter and salt into a large clean bowl.


Rub the butter into the flour with your fingertips until the mixture resembles fine breadcrumbs.

Add very cold water to the mixture and stir until the dough binds together, add more cold water a teaspoon at a time if the mixture is too dry. wrap dough in plastic wrap and chill in your fridge for up to 30 minutes.

slice onions into rings. heat 2-3 tablespoons of vegetable oil in a frying pan, add salt and the onions, saute, season and allow onions to caramelise slightly.

Roll out dough with a rolling pin and cut it into strips about 12cm wide. Place Sausage and caramelised onions down the length of the pastry and roll, covering sausage with the pastry. Place the sausage roll into a baking tray lined with non stick baking paper. Prick the top of the pastry with a fork and brush with beaten egg (egg wash).

Cut the rolls into desired size and bake for 20-30 minutes until golden brown (you can brush with the egg wash at intervals)

Best served warm with a glass of coconut and pineapple smoothie and enjoyed with family and friends.
