Eggs
Green Pepper
Scotch Bonnet (Fresh Pepper)

Spring Onions
Plantain
Vegetable Oil
Spice and Seasonings
Peel and dice Plantain into cubes put 2-3 cooking spoons of vegetable oil in a pan and allow to heat. Sprinkle little salt on plantain and fry in the heated oil. Allow to fry on medium high heat till golden brown and bring it out of the oil using a slotted or perforated spoon to easily drain out oil.
Dice tomatoes, onions and peppers. Cut the pepperoni sausage into rings. Using approximately 3 tablespoons of heated vegetable oil in a pan, sauté the fresh pepper and onions, add the green pepper, pepperoni sausage and tomatoes. Allow to cook for 3 minutes, season as desired and garnish with chopped spring onions.
Wash your eggs and break into a bowl, whisk then pour into the fried Plantain, thoroughly mix and incorporate the mixtures well.
Grease a baking pan and pre heat oven. Add the sausage sauce to the Plantain and egg mixture, stir and pour into baking pan. Level and break an egg over it. Garnish with Fresh sliced tomatoes and basil leaves, send into the oven to bind for 10-15 minutes.
Serve with Fresh juice and share with loved ones.
