INGREDIENT
Season and boil your chicken with half bulb of onion and your favorite herbs and spices.Grate coconut to get the shavings, blend shavings with generous amount of water, pour into a sieve to extract milk.
Peel, wash and cut yam into chunks, put in a pot with very little water, add the coconut milk and chicken stock.
Blend Pepper, Garlic (one to 2 cloves), tomatoes (optional) and onions. Pour into the yam. Squeeze the lemon grass (make sure you tie it in a bunch so you can easily fish it out, click to watch video) Allow porridge to cook and once yam is soft, season as desired. Add the chicken, one cooking spoon of vegetable oil. Cook for another 3-4 minutes. Remove the lemon grass and garnish porridge with spring onions. Stir and porridge is ready to serve.
