COUSCOUS BAKED IN MEAT SAUCE

INGREDIENTS

Couscous
Chicken Broth/stock
Seasonings, herbs and spices
Onions
Fresh Pepper
Tomatoes
Vegetable oil
Garlic
Minced Meat
Coriander leaves (curry leaves)
Parmesan Cheese

PREPARATION
To make Couscous, Season and Boil Chicken (to get broth) as desired, remove chicken from broth, sieve and add couscous. Turn off burner before you add couscous, cover for 3-5 mins and fluff, Couscous is ready and could be eaten with any sauce.




 
To make meat sauce, Chop onion, Peppers, Tomatoes, add 2 cooking spoons of Veg oil into a pan, add garlic, salt, onion, Pepper and tomatoes. Allow to cook for a few minutes add your tomato paste and as soon as the sour taste is gone, add the coriander leaves and the minced meat, season as desired and allow to cook for 7-10 minutes.
Grease a baking Pan, then add a spoon of the sauce, follow with a portion of the couscous, (you can add your boiled and chopped chicken on the next Layer, but this is optional as the purpose is for the broth). Keep Layering (click to watch) with sauce and couscous but finish with the sauce on top.
Grate and add a generous amount of Parmesan Cheese, send into a pre-heated oven and allow to cook for 10 minutes till it’s looking all Gooey on top. Serve with freshly made salad and enjoy with family and friends.
