Ingredients
Golden Penny MacaroniLettuce
Cabbage
Sweetcorn
Cucumber
Lemon
Eggs

PREPARATION
Bring a pot of water to a rolling boil, add salt and one table spoon of oil. Pour in your Golden penny Macaroni and allow to cook for not more than 10mins, drain in a colander and set aside.
Grate your carrot, Dice Cucumber to your desired shape, Slice cabbage thinly. In a salad bowl, form a bed of shredded lettuce by shredding them with your hands, then arrange vegetables as desired or in layers, sprinkle sweet corn and set salad aside.
In a pan, bring water to a rolling boil, break an egg at a time carefully into a small cup or bowl, reduce heat from pan till it simmers, pour egg quickly into water and allow to set. Remove from pan with a slotted spoon and run cold water on it to cool then place on the salad. click for video
Drizzle lemon juice on salad. To serve, scoop Golden Penny macaroni into a plate and add the salad (remember to crown it with the poached Egg). Enjoy with your favorite Salad dressing and friends.
