Recipe: Fried Rice (Mothers Day)

INGREDIENTS

Rice per boiled
Chicken
Ginger
Garlic
Rosemary
Oregano
Seasoning
Onions
Green Peas
Carrots
Sweet Corn
Shrimps
Liver (Boiled and diced)
Vegetable oil
Green pepper
Eggs (2-3 depends on the quantity of rice)





PREPARATION

Wash and season chicken with garlic, ginger, Onions, Rosemary, oregano, salt and seasoning- cook till chicken is tender, then remove chicken from pot and grill or fry. Sieve the chicken broth/stock, then season to taste as desired (this is usually necessary if you add more water to the stock) bring to a boil then add parboiled rice (be sure to taste to ascertain the likely result after its done, you can add more seasoning ingredients to your taste) When rice is done, set aside.
Dice Green Peas, Carrots, Green pepper, and Spring onions into equal shapes.
Add 2 tablespoons of oil to your frying pan allow to heat, add salt then fry your eggs, scramble then set aside. Add 2 tablespoons of oil to the pan again then add a pinch of salt, follow with the shrimps and fry till pink, set aside also.
In a wok or bigger frying pan, add two cooking spoons of oil, allow to heat, add salt then you begin to add your diced ingredients starting with the hard ingredients to the soft ones. Start with your Green peas, stir for a minute then add your carrots, follow with the Green pepper, then the spring onions, add the diced liver, the shrimps and the eggs, then stir.
Season with seasoning cubes (chicken seasoning preferably), rosemary, oregano and curry, Add the sweet corn then set aside.
You can transfer the vegetables to another bowl or pot, then leaving a portion in the wok, add some rice and stir fry for 2 minutes. Serve with the grilled Chicken and Bon Apetit
