Anwirin Kofo-Quadri(Mrs) from Lagos Preparing: Okro and vegetable soup
Ingredients and preparation
Beef,snails,stock fish,black fish,fresh pepper,onions,okro,pumpkin leaves,agbolor,crayfish, seasoning cubes,salt and palm oil.
Preparation
1) wash meat into pot, add salt and seasoning cubes, half ball of onion 2) also wash the stock fish with hot water and add to the meat 3)set on fire and allow to cook for 20mins. 4)add more water to the broth and put the snails,allow to cook for 3mins before adding the washed black fish. 5)pour already blended fresh pepper with onions and crayfish into the boiling pot,allow to cook for another 3 minutes.6) check for salt,then put a little quantity of blended agbolor to increase thickness.7) let soup cook for 3 minutes and then add chopped okro and pumpkin leaves into the pot,mix it well and immediately put of fire,so the okro retains its green colour.
