Sunday Morning i made Coconut white rice with Goatmeat and Dried Catfish stew ( i leave you to imagine it... let me epp you, "every single person served, emptied their plate" Gbam! )
After extracting the milk from blended coconut, i was left with chaff to discard and i immediately felt this guilt

So i poured some evaporated milk in it, Sugar to taste, half a cup of all purpose flour, Vanilla extract, No eggs in my fridge
π€ so i just mix the whole thing with 1 cooking spoon of Vegetable oil.

Mixed to incoporate well then scoop into paper cake cups. Bake for 25 minutes on medium heat and what came out was a very yummy Coconut kinda cake
