Let me share the recipe from last saturday moi-moi
INGREDIENTS
Beans
Pepper
Seasoning
Oil
Eggs
Onions
Shrimps
Beans

Pour some water on the beans
Then process it in a food processor to remove the skin
This process takes me less than one minute for each batch when removing the skin
Pour the beans into a bowl, then begin to seperate skin from the beans with the help of a sieve

Blend beans in batches with water, It should not be too light (and to save ur blender, you can blend it in the market or using the commercial grinding machines)
Add Pepper and One bulb of onions

Pour the mix in a bowl and stir
Add salt, oil (about one cup to 5 cups of beans) season as desired but remember less is more cos for moi moi matter if you over season u cant remove it o. mix very well till everything is properly incorporated
U remember the shrimps from Saturday morning?... i didn't finish it so i added it as garnish
Boiled egg for garnish too
Pour moi moi into pouch. Dont overfill it cos moi moi will rise... so give it some space. Filling it to 2/3 of pouch is just fine

Arrange them in an upright position in your pot and cook for 30mins or until Moi Moi is done and firm
Moi Moi came out perfect. Can u see the Ijebu Garri and sugar on Standby?... there is nothing as perfect as Moi Moi with cold water Ijebu Garri on a Saturday.
